The blueberry ricotta pancakes were, for the most part, delicious. The only part I didn’t care for was the blueberry. Maybe I should have gone with fresh blueberry instead of the frozen like the recipe called for. But the ricotta and the vanilla was excellent. I also made some modifications right off the bat. Instead of honey syrup, I just used the honey. I also used Hungry Jack wheat pancake mix (awesome decision, by the way). Hmm, maybe I’ll make them again tonight.
