Cross Coq Au Vin off the Culinary Bucket List.
I followed the recipe from Simply Recipes pretty closely. I usually try to follow the recipes I’m cooking for the first time, taking note of what I would do the next time I would make the dish. Granted, for a first time creation, my Coq Au Vin was savory with the chicken so tender I can cut it with my fork. But it was so watery, despite the fact that I ran out of the red wine. I don’t know if it was because of the mushrooms. But next time I would make the following changes:
Use dry thyme or scrape the thyme off the sprigs. It was a pain to sift through the stew to find all the thyme sprigs.
Reduce the liquid before adding both the mushrooms and onions.
Use the correct amount of red wine.
Use boneless skinless chicken thighs only (instead of chicken legs).
I will say that garlic mashed potatoes were PERFECT as the side dish. The mashed potatoes soaked up the sauce well. And overall, the dish was definitely a success!
